Instant Pot Sweet Potato Chili

This Sweet and Smokey Chili has all the right flavor in all the right places. I love cooking a double batch of this and enjoying it for Breakfast, Lunch, and Dinner. IT IS THAT GOOD!

Prep Time 10 Minutes

Total Time 50 Minutes


INGREDIENTS


  • 15.25oz Canned Low Sodium Black Beans, Rinsed

  • 15.25oz Canned Low Sodium Kidney Beans, Rinsed

  • 15.25oz Canned Low Sodium Cannellini Beans, Rinsed

  • 1 Small Sweet Potato, Peeled and Cubed (any color)

  • 1 cup Frozen Corn

  • 64oz Water or Vegetable Stock

  • 4tsp Dehydrated Onion

  • 2tsp Garlic and Herb Seasoning

  • 1tsp Garlic Powder

  • 1tsp Chili Powder

  • 2tsp Cumin

  • 1/2tsp Black Pepper

  • 1tsp Stone Ground Mustard

  • 1/2 - 3/4 cup Coconut Aminos (depending on how much sweetness you like)

  • 2tbsp - 4tbsp Liquid Smoke


INSTRUCTIONS

  1. Place all ingredients in your Instant Pot

  2. Set to 5 minutes high pressure, double check your pot is sealed correctly

  3. Allow it to Naturally Release Pressure before opening


TIPS

  • If you would like to use dry beans, use 1/2 cup of each bean called for plus and additional 1.5 cups of water per 1/2 cup of beans. You will need to adjust your cook time to about 35 minutes on High Pressure. Be sure to naturally release.


  • Liquid Smoke can be a slightly new flavor when you are first starting to use it. It can be overpowering. So add less especially if you are new to it. You can always add more if you find you would like more.


  • You can use a crock pot or stove top if you would like. I do not have instructions or cook times for this.


  • Want to speed up prep time even more? Use frozen cubed sweet potatoes! 1 bag should be perfect!
