Perfect Pot Roast (WFPB, Vegan, Oil Free)

As a child I often remember returning home to a delicious smell lofting through the house. My mom would set a pot roast in the slow cooker in the morning and when we all returned home that evening, well all we needed was our noses to guide us inside. This recipe takes me right back there. But this time, it is cruelty free, and actually good for you!















You can practically smell it already right?

Just look at that texture and colouring!














 

INGREDIENTS

  • 1 small yellow onion, chopped

  • 5 cups Oil free Vegetable Stock* or 5 cups water and 5 servings bouillon

  • 1 tbsp Vegan Worcestershire

  • 1.5lbs Petite Potatoes

  • 2lbs of carrots (baby carrots, or large ones chopped into rounds - or both)

  • 2 tsp Onion Powder

  • 2 tsp Garlic & Herb Seasoning

  • 2 tsp Thyme

  • 2 tsp Oregano

  • 2 tsp Parsley

  • 3 Bay Leaves

  • 1 tsp Black Pepper

  • 1 tsp Rosemary

  • 1 tsp Celery Seed or Celery Salt

  • 2 14oz cans of Jackfruit (chop it roughly after removing it from the can)


DIRECTIONS

*I used my Instant Pot for this on the Slow Cooker setting. I was able to saute the onion in the same pot using the Saute Setting. If your pot or slow cooker does not have a saute setting then complete the onions on stove top and transfer to your slow cooker*

  • Saute onion until golden brown using about 1 cup of your water or veggie stock as needed

  • Deglaze your pot

  • Add in all remaining ingredients and stir well

  • Slow Cook on High for 7hrs

  • Top with additional herbs to taste and enjoy!


NOTES

I used this bouillon. However you could use whatever kind you would like. If you are not concerned about oil, Better than Bouillon Low Sodium Vegetable is a great option as well. If you can't find those, try to locate some dried mushrooms. Soak 2 small packages of them, strain the water, and use the soaking water as your oil free broth! Add in the mushrooms too of course. Works amazing every time.


Do Not use Frozen JackFruit, it must be canned.


Be sure to rinse your Jackfruit or buy some packed in just plain water if you are concerned about the salt content. Or try a lower sodium one.


Frozen Peas would be a delicious addition to this recipe
