Vegan Deviled "Eggs" (oil free)

Springtime Get Together's and Summertime BBQ's very often have this delicious bite sized appetizer at your fingertips. If you thought you would miss out, think again. This version not only tastes amazing and ridiculously close to the real thing, but is also cholesterol free and cruelty free!




INGREDIENTS

  • 4 tbsp Oil Free Mayonnaise or any Vegan mayo of choice

  • 1 package Extra Firm Tofu

  • 1 tbsp Mustard

  • 1 Sweet Gherkin Pickle (yes 1, trust me)

  • 1 tsp White Wine Vinegar

  • 1 tsp Old Bay Seasoning OR 1 tsp Smoked Paprika and 1/2 tsp Celery Seed

  • 1 tsp Kala Namak

  • 15 Baby Potatoes (steamed whole and chilled overnight)


DIRECTIONS

  • Place all ingredients except the potatoes in a high powered blender or food processor

  • Blend until smooth

  • Make any adjustments to flavor and texture and mix again

  • Place mix in the fridge for an hour

  • Slice the potatoes in half and core out a spot in the center of each half with a melon

  • Pipe the filling into the potatoes

  • Garnish with Old Bay or Smoked Paprika

  • Serve and Enjoy!
