Vegan Spring Time Celebration Menu

To Start out we have these tasty little Deviled Potatoes...










Our Salad is brought to us by Jane and Ann Esselstyn. I used quinoa in place of black rice, and baby kale in place of arugula - Check out this video for the recipe!












For our main dish we have Teriyaki Lettuce Wraps. I made two versions. One with tofu, and one with beyond sausage so that my whole family was fully satisfied - even the tofu skeptics.










For dessert I made this absolutely delectable Carrot Cake Ice Cream!
