This is a super simple crowd pleasing dish. Perfect for a sit down family meal or a potluck setting!
Another Great thing about this dish is that if you are not a fan of tofu, you can use Original Style Beyond Sausage in it's place, see the notes below.
INGREDIENTS
Romaine Hearts (washed and dried)
4oz Chopped Shiitake Mushrooms
1 cup cooked Rice
1 package Extra Firm Tofu (frozen, thawed, drained)
4 cloves minced Garlic
1 bunch of chives chopped
2 tbsp minced or shredded ginger
2 tbsp Coconut Aminos
2 Tbsp Low Sodium Tamari
1 tsp Agave (optional)
Chopped Purple Cabbage for garnish
DIRECTIONS
Freeze your tofu a couple days before
Remove from freezer and thaw
Drain water by squeezing tofu
Crumble and tear it into small pieces
Saute mushrooms (adding little bits of water as needed so you don't use oil)
Add ginger and garlic and cook til fragrant
Add all remaining ingredients except cabbage and lettuce
Cook until well combined and heated through
Serve in lettuce wraps and garnish with cabbage
NOTES: You can replace the tofu with 2 Original style Beyond Sausages, just crumble them in to the pan. The agave adds a little sweetness that I really enjoy but it is definitely not necessary and you can leave it out. Do not skip the freezing and thawing process for the tofu, it completely changes the texture of the tofu.
