These Brekkie Cookies are one of the best things to ever come out of my kitchen. They taste as delicious as a slice of banana bread, but they are as healthy as a bowl of oats! Don't be fooled by the name either. They are a convenient grab and go breakfast item, but they are truthfully a highly requested dinner item by my toddlers. When you can disguise a bowl of healthy no sugar added oatmeal as cookies...the only real question is why wouldn't you?
INGREDIENTS
(makes 6 to 12 cookies depending on size)
3 Over Ripe Bananas (frozen or fresh)
1 cup Unsweetened Plant Milk (we like rice milk)
2 tsp Vanilla Extract or Vanilla Powder to taste
15 to 20 Pitted Deglet Dates
6 cups Rolled Oats
DIRECTIONS
Put first 4 ingredients into a high powered blender or food processor
Blend until Smooth
Measure Oats into a large bowl and combine all ingredients. Let stand for 15 to 20 minutes.
While your dough sets up, preheat your oven to 425 degrees F
Form into cookie shapes as shown above and place on a parchment lined baking sheet
Bake for 15 to 20 minutes or until a golden brown color
